Lentil and zucchini fritters with cucumber salad

Super easy golden-brown lentil and zucchini fritters paired with a refreshing salad of crisp cucumber and mint, topped with crumbly, rich Danish feta and a zesty sprinkle of lime.

Instructions

For the fritters

Step 0
Grate zucchinis and onions and then place in a clean tea towel, wring out as much liquid as possible
Step 0
Add the egg, flour, lentils and spices to a large bowl and mix together, crush lightly
Step 0
Working in small batches, fry on medium heat in neutral oil until golden-brown

For the salad

Step 0
Julienne the cucumber and add the mint, lime, lime zest in a bowl and top with Danish feta
