Tropical prawns with Thai vinaigrette

The salad

Gently mix all the ingredients, except for the dressing, in a shallow dish.

Put all the ingredients into a screw-top jar and shake vigorously until blended well.

This dressing keeps perfectly in the refrigerator for several days.

300g prawns

cooked and shelled

150g cucumber

de-seeded and diced

1 mango

flesh scooped out and cut into matchsticks

8 to 12 crisp salad leaves

such as romaine

1 handful of mint leaves

1 handful of coriander

chopped

1 medium red chilli

thinly sliced

1 quantity of Thai vinaigrette

2 tbsp yuzu or lime juice

1 tbsp toasted sesame oil

1/2 tbsp fish sauce

1/2 tbsp palm or brown sugar

1 medium red chilli

thinly sliced

1 crushed garlic clove
